The early morel season is soon to be upon
us here in the Pacific Northwest. We refer to these delicacies as "The
Best of the West". This was
one of the first mushrooms that we began picking 15 years ago. We have
very fond memories of hiking through Grizzly country in Montana in the
search of Morels. We tied bells to our buckets to ward off any bears.
(I sometimes wonder if that was a good idea). We never ran into any grizzly's,
thank goodness. We have seen bears in the woods when picking but we only
saw the back end of them as they were running away. Lucky for us. Morels
are one of our favorites. Morels and eggs are always the first thing we
eat when we get our first fresh Morels of the season. Mmmmm
good...Morels are one of those mushrooms that are delicious fresh as well
as dried. The best thing about dried Morels is
that you can have them any time of year.
Morels are an excellent mushoom for stuffing due to their size and texture.
We like to use a mixture of:
bread crumbs
garlic
butter
grated parmeasan
then battered and fried
However you prepare our morels, be careful to cook thoroughly.
